Coffee Cake



Who doesn't love a big chunk of proper cake? Something you can really sink your teeth into. This is one of those cakes. It's coffee, but the light brown sugar makes it fudgey and sweet. It's perfect served with a glass of milk or a cup of fruit tea as a delicious afternoon snack. Want to give it a go? It's super easy, based on a classic sponge cake recipe with a few twists.

Cake
225g Unsalted Butter
125g Caster Sugar
100g Light Brown Sugar
4 Eggs
225g Self Raising Flour
1tsp Baking Powder
4tsp Instant Coffee Granules mixed with ~25ml boiling water

Buttercream
425g Icing Sugar
200g Unsalted Sugar
4tsp Instant Coffee Granules mixed with ~25ml boiling water

1. Preheat the oven to 180°C and combine the butter, sugar, eggs, flour and baking powder.


2. Mix the coffee with the boiling water and pour into the cake mixture. Combine well.



3. Fully line a 12inch tin and pour your cake mixture in, then place in the oven for around an hour, or until golden brown on top, and a skewer comes out clean. Whilst the cake is in the oven make the coffee for the icing and leave to cool.



4. Remove from the tin and leave to cool. When fully cool, cut the cake in half.



5. Combine the icing sugar and butter, and add the cooled coffee. Sandwich the two cakes together with half of the icing, and use the rest to decorate the top however you fancy.
