I'm not vegetarian, but I eat very little meat mainly because I've been living with a vegetarian for three years. I felt so much healthier when I cut down to only eating meat once every few weeks. It took a bit of time to get used to it, but now I have a whole host of delicious vegetarian dishes, so I thought I'd share one of my favourites - vegetable lasagne.
Start by chopping the veg you want to make the layers. You can use whatever you want, but I like aubergine and peppers, with a bit of spinach thrown in for good measure. Put the aubergine and peppers with some oil drizzled over, with mixed herbs and garlic, in the oven at 200°C to roast.
I like to get all the chopping out of the way first, so chop an onion and some mushrooms nice and small, so you can add them to the tomato sauce.
Pop them in a hot pan with some oil, add some stock and some chopped tomato.
A spoonful of red pesto really amps up the flavour. Add a sprinkling of mixed herbs and a chopped clove of garlic too,
Put the tomato sauce to the side, and make your white cheese sauce. Melt 25g of butter, and then add 25g of flour. Take off the heat, add around 300ml of milk, whisking all the time. Add a good handful of butter, a spoonful of grainy mustard, and whisk until it thickens.
Now it's time to layer up and put the lasagne together. Cover the base of a dish with the roasted veg, and sprinkle with spinach.
Spread over the tomato sauce, and drizzle a bit of white sauce for good measure.
Add lasagne sheets, spread with white sauce over the top. Another layer of the tomato sauce, veg, more tomato sauce, and then lasagne sheets.
Finally, another layer of white sauce, and sprinkle a layer of grated cheese.
Stick it in the oven at 200°C, and take it out after about half an hour, or when the cheese on top is a nice golden brown colour.
